Reorientation of the catering services in the new Terminal 1 pier at Munich Airport

Munich Airport is expanding its culinary offerings in the newly designed Terminal 1 pier with five specialized restaurants. The operational management of the new establishments will be handled by Allresto Flughafen München Hotel und Gaststätten GmbH, a wholly owned subsidiary of Flughafen München GmbH.

The concepts were developed to sharpen the service profile at the Bavarian aviation hub and to cover diverse passenger needs – from quick snacks in public areas to upscale service in the security area. The focus is on combining local brand identities with international standards of chain restaurants.

A key component of the portfolio is the presence of the traditional Munich brand Käfer. In an exclusively designed restaurant with approximately 70 seats, classic dishes such as Wiener Schnitzel and beef tartare are offered, complemented by an open show kitchen. Extending the concept is "the ODEON by Käfer," a 90-seat space that combines urban bar culture with gourmet food elements. An architectural highlight of this area is a large, glass-fronted wine cabinet showcasing over 100 international wines. This development underscores the airport's strategy of integrating renowned local companies into its infrastructure to emphasize the regional identity of the location.

The offerings are complemented by "Cucina Popolare," an Italian restaurant concept with over 120 seats, focusing on traditional pizza and pasta dishes. For travelers with limited time, the multi-brand concept "Münchner Leibspeise" (Munich Favorite) has been implemented. Here, Bavarian specialties such as half-chickens are served at various food stations alongside international offerings from the "Pommes Freunde" brand and Asian dishes. Digital self-order terminals are intended to increase service speed. A third location of the "dean&david" chain, specializing in salads, bowls, and juices, will also open in the public area of ​​the pier.

Industry analyses show that Munich Airport is responding to the ongoing trend toward individualizing airport catering with this diversification. The integration of halal options, as well as vegetarian and vegan dishes, into the airport's signature cuisine is aimed at meeting the demands of international transit traffic. Centralized management through its subsidiary Allresto also allows the airport to ensure consistent quality control and staff scheduling. The new pier thus serves not only as a logistical link but also as a commercial platform, designed to optimize dwell time and revenue per passenger through a blend of premium dining and efficient fast-casual options.
